Savory Roasted Apples - Full Plate Blog

apples, cut into chunks
olive oil
salt + pepper
onions, chopped (optional)
garlic, minced (optional)
cumin (optional)
chili powder (optional)
cinnamon (optional)
smoked paprika (optional)


Heat oven to 375. Spread apples on a rimmed backing sheet, drizzle with olive oil, and sprinkle with garlic and spices. (I trust you to know how much of each spice to add, depending upon your family's tastes. Roast for 12-15 minutes, until apples are tender. (Be careful not to overcook or the apples will become mushy. Then again, if you prefer them more like a savory apple sauce, feel free to leave them in the oven for another 10 minutes, or so.)

Paleo Apple Tart - Elana's Panrty

Cold weather means apple pie (or some version thereof) in my house.  Our favorite is this cinnamon-spiked apple tart encased in a pecan crust. Since my boys go gaga for anything involving baked apples, this gluten free apple tart with a high protein, grain free crust doesn't last long around here.

Cinnamon Apple Tart with Pecan Crust


  • 4-5 medium Jonagold apples, peeled, cored and sliced ⅛-inch thick
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon arrowroot powder
  • 1 tablespoon honey
  • 1 tablespoon ground cinnamon
  • 1 Pecan Tart Crust
  1. In a large bowl, toss apple slices, lemon juice, arrowroot, honey and cinnamon
  2. Fan apples out on top of uncooked crust, forming a circle
  3. Layer more apples over circle and in its center
  4. Cover tart with foil, and bake at 350° for 45 to 70 minutes, or until juices are bubbling
  5. Remove foil and cook uncovered for 5-10 more minutes
  6. Serve with Vegan Coconut Whip (page 94 Gluten-Free Cupcakes)

MEAL OF THE WEEK - 3.11.12

This is one of my favorites.   SOOOOO Yummy.  (it does not look it, but there is plenty of protein and it is very filling)


Warm Spinach Salad
Apple Quinoa 
This is a great dessert but the leftovers make an awesome breakfast 

Bacon, Apple Raspberry Vinegrette Salad

Here is what you will need

2-3 Romaine Hearts, Shredded
1-2 apples chopped
1 pkg. Bacon, cooked and chopped
1 pkg. Walnuts
1 pkg Feta Cheese

Dressing: 
4 Tbsp of honey
1 tsp salt
1 tsp dry mustard
1/2 cup Red wine vinegar
1/2 small Red onion 
1/2 cup olive oil
1 tsp poppy seeds

Combine 1st 5 ingredients for dressing in a blender and blend till smooth. Slowly add in oil while blender is running. Stir in poppy seeds. It's easy and yummy as that!

Granny Smith Apple Crisp

Instructions
  1. In a 1.5 quart pyrex bowl, toss apples, honey and lemon juice
  2. Stir water and arrowroot together to make a slurry then toss into apple mixture
  3. In a medium bowl, combine almond flour, salt and cinnamon
  4. In a smaller bowl combine vanilla, coconut oil and xylitol
  5. Stir wet ingredients into dry --mixture will be very crumbly
  6. Sprinkle topping over apple mixture
  7. Bake covered at 350° for 45 minutes, until apples are soft and topping is golden brown

Regina's Apple Treat

Peel and core apples, slice them to become circles.
Heat all natural unsalted peanut butter in microwave approx. 1 minute and drizzle over apples.
Sprinkle unsweetened coconut flakes.
Shredded a piece of dark chocolate bar.
Garnish with any type of nut you would like. Pumpkin seeds, sunflower seeds, sliced or slivered almonds, raw pepitasa, or just use whatever is in your cabinet!

Spiced Sweet Potato, Pork & Apple Cider Stew –


My Paleo Crockpot

Ingredients:
  • 2 medium sweet potatoes
  • 1 large Granny Smith apple
  • 1 cup red onion
  • 1 lb pork chops, thawed
  • 3 cups apple cider
  • 1 cup water
  • 1 T poultry seasoning
  • 1 t pumpkin pie spice 
  • 1/2 t salt
  • 1/4 t black pepper
  • 1 T apple cider vinegar
  • 1 t vanilla extract
Instructions:

Peel and chop the sweet potatoes and apple into bite-sized pieces.  Dump them into the crockpot.  Chop enough of a red onion to fill your measuring cup, and then plop the onion in the crock as well.

Definitely remember to wash your hands now. 
(And definitely DON'T scratch your eye and then flail around the kitchen doing that oh-crud-I-got-onion-in-my-eye squealy dance.)

Using a pair of sharp kitchen scissors, cut the pork chops into bite-sized pieces and place them in the crockpot.

Add the remaining ingredients and mix well.  Cover and cook on LOW for 6 hours.

Baked Apple Quinoa



Ingredients
·          1c water
·          1/2 c Quinoa
·          2 eggs
·          5Tbsp unsweetened apple sauce
·          1/2 tsp-1 tsp cinnamon
         2 apples
         handful chopped peacns

Instructions

1.       When water comes to a boil, add Quinoa and turn down to a simmer.  
2.       Then mixture eggs, apple suace and cinnamon. 
3.       Add too Quinoa and stir.  Simmer for 10-15 minutes.
4.       Pour into oven safe pan and broil in oven for 5-7 minutes. 
Top with chopped pecans and chopped apples.  Drizzle with honey

Raw Apple Crisp


Ingredients:
  • 4  apples, cored and chopped (Can substitute apple, peaches, or pears)
  • 1/2 cup orange juice
  • 3/4 cup pecan halves
  • 3/4 cup sliced walnuts
  • 3/4 cup golden raisins
  • 1 teaspoon ground cinnamon
Instructions
    1. Put apples in an 8-inch square baking dish or 2-quart casserole dish. Drizzle with orange juice, toss until the fruit is coated and smooth the top.
    2. In a food processor, combine pecans, walnuts, golden raisins, ginger and cinnamon and pulse just until chopped.
Spoon the nut mixture over the apple mixture and serve

Homemade applesauce


 

Ingredients

  • 10-15 apples (Golden Delicious)
  • Cinnamon

Instructions

    1. Take apples (cored, peeled, and sliced).
    2. Bring them to a boil with about a cup of water (you may need to add more).
Once they soften, mash them and add cinnamon

Cranberry Salad



Ingredients
·        1 12 oz bag whole cranberries
·        4 peeled oranges cut into chunks
·        3 small apples – cored (skin left on if they are organic)
·        3/4 cup pecan pieces
·        1/4 of a large pomegranate
·        1/2 tsp ground cinnamon
·        1/4 tsp ground cloves
·        1 T honey (optional)

Instructions
1        In a large bowl food processor add the cranberries, apples, oranges and pecans. 
2        Pulse until you get a consistency you like. 
3        Transfer into a large bowl and add pomegranate, cinnamon, cloves and honey if you are using it. 
                        Toss to combine.  Adjust to desired sweetness with honey.

Apple Crunches – Lee


Ingredients

  • 1 granny smith
  • 3 oz crushed cashews
  • 6 oz coconut milk
  • 1/3 cup unsweetened apple juice
  • 1 tsp cinnamon
  • 1 egg

Instructions

1.     Remove core and slice apples. 
    1. Beat the egg and add the milk and juice in one bowl. 
    2. In another put cashews and cinnamon and mix. 
    3. Dredge the apple slice in milk then dip it in cashews, coat it.  The coating will be sticky.  You only have to coat one side. 
    4. Line a pan with aluminum foil and grease with coconut oil or use parchment paper. 
Place the apples on the pan and bake at 350 until golden brown
