Carrot Banana Muffins - Spark People

    Ingredients
    2 c Almond Meal/Flour (Bob's Red Mill)
    2 tsp Baking Soda
    1 tsp Celtic Sea Salt
    1 T Cinnamon
    1 c Dates, pitted
    3 ripe Bananas
    3 Eggs - Omega3 variety
    1 tsp Apple Cider Vinegar
    1/4 c Coconut Oil
    1.5 c Carrots, shredded
    3/4 c Walnuts, chopped
    18 muffin tin liners

Instructions

1) Preheat oven to 350 degrees.
2) In a small bowl, combine almond flour, baking soda, salt, and cinnamon.
3. In a food processor, combine dates, bananas, eggs, vinegar and oil.
4) Transfer mixture to a large bowl.
5) Blend dry mixture into wet until thoroughly combined.
6) Fold in carrots and walnuts.
7) Spoon mixture into paper lined muffin tins.
8) Bake for 25 minutes.

Serving Size: Make 18 muffins - approx 55 grams each
