Steak Salad


Serves 4

Ingredients 
  • Flank steak (or New York strip)
  • 1 lb cherry tomatoes
  • 2 garlic cloves, sliced
  • ½ c extra virgin olive oil
  • salt and pepper to taste
  • fresh spinach leaves, etc
  • 1 lb goat cheese or feta
  • basil leaves

Instructions
Season steak with salt and pepper.  Sear meat on grill or in heavy pan.  Can finish grilling or place in 350 oven to cook.  Combine tomatoes, garlic, oil, red vinegar, salt and pepper in a mixing bowl.  Place in a baking dish and bake at 375 for 6 minutes.  In a mixing bowl toss spinach or salad mix with the goat cheese.  Divide onto four plates. Add roasted tomatoes, including all the liquid from the baking dish, which is now your dressing for your salad.  Put steak on cutting board, and slice thinly and place slices over the roasted tomatoes.  Finish the dish with basil.
