Chili Carrots



Ingredients:
10-12 Carrots
1/4 cup garlic olive oil
1 tsp chili powder
1tsp cumin
1/2 tsp salt

Instructions:
Peel carrots and chop them into 1 inch pieces. In a measuring cup, measure out 1/4 cup garlic olive oil, add the cumin, chili powder and salt the oil and stir it up. Put the carrots in a frying pan and pour the oil mixture over carrots and coat them well. Cook carrots on medium low heat till they are cooked through. At the end I turn up the heat a little. I like get one side of them to look a little burned…it’s mighty tasty!
If you can’t find garlic olive oil, you can very quickly make your own. Mince 3 garlic cloves while gently heating olive oil in a pan over medium-low heat. Add garlic and cook, stirring frequently, until garlic is soft. At this point the olive oil has been infused with the garlic flavor and is ready to use. You may pick out the garlic pieces or leave them in for more flavor
