Pear Spinach Salad


Ingredients: 

  • Bag of spinach leaves (prefer baby spinach)
  • Pears (prefer red ones)
  • Pecans
  • Olive oil
  • Red Wine Vinegar

 Instructions:

1.     Mix equal parts olive oil and red wine vinegar.  For two people, probably only need 2 TBL each.  Important: only want to coat barely coat the spinach leaves.  Don’t want to drown them. 

    1. Melt some butter in a skillet and toss in some pecans and brown sugar.  Stir long enough to toast them a bit but don’t let them burn.

    1. Slice the pears into long vertical slices and put on top of spinach leaves.
Top with pecan and toss with a little dressing right before serving.
