- 12 eggs, beaten
- 1/3 c. coconut milk
- 1/2 c. almond meal
- 1 can black olives, chopped
- 1 bag stir fry vegetables, chopped
- 1 lb ground turkey
Brown the turkey. Chop veggies & olives in food processor. Add all ingredients to eggs & mix well. Pour into a greased 9x13 pan and bake for 30-40 minutes, until the middle is firm. Cut into squares.
(could put in muffin pan)
